Home | Maple and garlic glazed perch
This simple glaze with an Asian twist works just as well with fish as it does with your favourite game bird. Serve on a bed of jasmine rice. Ingredients (Serves 2) 1 tbsp butter 4 fillets of boneless, skinless yellow perch 1 tsp salt ½ tsp ground black pepper 2 green onions, sliced Glaze 2 cloves garlic, minced 1 tsp Dijon mustard ¼ cup maple syrup 1 tbsp hoisin sauce 1 tbsp soy sauce ½ tsp sriracha hot sauce (more if you like it spicy!) Directions 1. Whisk together all glaze ingredients into a bowl and set aside. 2. Preheat oven to 400˚F 3. Season perch fillets with salt and pepper. 4. Heat a non-stick pan over medium-high heat and melt butter. 5. Sear fish for 1 minute on each side. 6. Generously glaze top of fillets, and place in oven for 3-5 minutes. 7. Remove from oven and serve with jasmine rice or some green vegetables of your choice. Garnish with green onion and an extra drizzle of glaze.
